This simple rice pilaf is light, fluffy, and full of flavor. Toasted rice cooks in broth with butter and aromatics for an easy side dish that pairs well with chicken, beef, or roasted vegetables.

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1/4 cup finely diced yellow onion
  • 2 tablespoons unsalted butter
  • 2 cups jasmine rice, rinsed and well drained
  • 4 cloves garlic, minced
  • 3 cups low-sodium chicken broth
  • 1 teaspoon kosher salt
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Rinse the rice: Place the jasmine rice in a fine mesh strainer and rinse under cold water until the water runs mostly clear. Shake well to remove excess moisture.
  2. Sauté the onion: Heat the olive oil in a medium saucepan over medium heat. Add the diced onion and cook until soft and translucent, about 3 to 4 minutes.
  3. Toast the rice: Add the butter and allow it to melt. Stir in the rinsed rice and cook, stirring frequently, until the grains are lightly golden and coated in the fat, about 3 to 5 minutes.
  4. Add the garlic: Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
  5. Simmer: Pour in the chicken broth and add the kosher salt. Stir once, bring to a gentle boil, then reduce heat to low. Cover and simmer for 15 minutes, or until the liquid is absorbed and the rice is tender.
  6. Finish: Remove from heat, sprinkle with chopped parsley, and gently fluff with a fork before serving.

Notes

  • Keep the lid closed: Avoid lifting the lid while simmering so the rice cooks evenly.
  • Fluff gently: Use a fork rather than a spoon to keep the texture light.
