Hearty goulash is a hearty one-pot dinner, made with ground beef, tender cavatappi, tomatoes and savory seasonings, finished with freshly grated cheddar and fresh green onions or parsley.

Ingredients

  • 1 lb ground beef chuck ((80% Lean/20% Fat)
  • 1 medium yellow onion, diced fine
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 cloves garlic, minced
  • 1 cup whole milk
  • 3 cups beef broth, low sodium
  • 1 14.5 oz can petite diced tomatoes
  • 10 oz can Rotel, Original
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp paprika
  • 2 whole bay leaves
  • 1/2 tsp kosher salt
  • 1 tsp granulated sugar
  • 2 cups Cavatappi pasta
  • 1 cup cheddar cheese, shredded (for garnish)
  • 1/4 cup green onions, sliced or fresh parsley, chopped (for garnish)

Instructions

  1. Brown the beef and onions. In a large pot over medium-low heat, add the ground beef, onion, ½ teaspoon kosher salt, and black pepper. Cook for about 10 minutes, breaking the beef into small crumbles with a wooden spoon, until the beef is no longer pink. Add the garlic and cook for 1 minute, until fragrant. Drain any excess grease, then return the beef mixture to the pot.
  2. Add the milk. Pour in the milk and continue cooking over medium-low heat for about 10 minutes, stirring frequently, until most of the milk has been absorbed.
  3. Build the sauce. Add the remaining ingredients, except the pasta, along with the remaining ½ teaspoon kosher salt. Increase the heat to medium and bring the mixture to a boil.
  4. Cook the pasta. Reduce the heat to a low simmer and stir in the cavatappi. Cook according to the package directions, stirring frequently to prevent the pasta from sticking to the bottom of the pot, until the noodles are tender to your liking.
  5. Serve. Spoon the goulash into bowls and top with shredded cheddar cheese and sliced green onions or chopped fresh parsley.

Notes

•If you do not have whole milk, you can substitute 1/2 cup heavy cream & 1/2 cup of whatever milk you have on hand.
