From “take a breather” as he dunks Mikey under the water in the pool on repeat, to hitting every ride at Kings Island for 12 hours straight last summer—my kids have come to love Uncle Mike for all the same reasons I always have. That’s a gift I don’t take for granted.

  • 1/4 cup plain Greek yogurt
  • 2 tbsp extra virgin olive oil
  • 2 medium cloves garlic, finely minced
  • 1 tbsp fresh rosemary, finely minced
  • zest of 1 lemon

  • 1 tsp kosher salt
  • 1/2 tsp black pepper, freshly ground

Chicken

  • 2 lbs boneless, skinless chicken breast, cut into 3/4-1-inch pieces
  • kosher salt, lightly to season
  • black pepper, freshly ground

Lemon Olive Oil 

  • 2 tbsp extra virgin olive oil
  • 1–2 tsp fresh lemon juice
  • pinch salt
  • 1 tbsp fresh parsley, finely chopped

Instructions

  1. Make the marinade: In a medium bowl, combine Greek yogurt, olive oil, garlic, rosemary, lemon zest, lemon juice, salt, and pepper. Stir until smooth.
  2. Prepare the chicken: Cut chicken into uniform 3/4–1-inch pieces. Lightly season with a small pinch of salt and pepper.
  3. Marinate: Add chicken to a zip-top bag or bowl. Pour marinade over and toss to coat evenly.
    Refrigerate for at least 30 minutes and up to 4 hours.
  4. Cook the chicken: Remove chicken from marinade, letting excess drip off (do not wipe clean).
  5. Grill method: Grill over medium-high heat for 8–10 minutes, turning occasionally, until the chicken is cooked through with light char.
  6. Finish: Place the grilled chicken skewers on a platter and drizzle the lemon olive oil evenly over the tops. Tent loosely with foil and let rest for a few minutes before serving.
