Easy Chocolate Bundt Cake with Chocolate Ganache

A classic chocolate cake, made a little more beautiful with the curves of a bundt pan and a silky layer of chocolate ganache. It’s simple, rich, and perfect for birthdays, gatherings, or those moments when only chocolate will do.


Why This Recipe Matters 

My sister-in-law, Robin, recently made my Pumpkin Spice Cake recipe and texted me a photo. But instead of the usual pan, she baked it in a bundt pan and it looked so pretty! She was bringing it to a neighborhood gathering, and suddenly the cake I’ve made so many times looked like something from a bakery.

And immediately I thought…

Why don’t I ever do that?

I use my mini bundt pan all the time, but the full-size one? It just sits in the cabinet like an overlooked piece of bakeware. After thinking about it for a minute, my mind went straight to one of my most dependable recipes, my go-to chocolate cake. It’s a cake I’ve made more times than I can count, always in a 9×13 pan or two 8-inch pans…basically every pan possible except a bundt.

This recipe has been a repeat favorite for years because it’s effortless, deeply chocolatey, and endlessly adaptable. Sometimes I frost it, sometimes I dust it with powdered sugar, but my absolute favorite way to serve it is with a glossy chocolate ganache drizzled over the top. It’s simple, elegant, and not overly sweet.

So I finally tried it in the bundt pan.

It looked beautiful, tasted great and felt just a little extra.

Ingredients

Cake

  • 2 cups all-purpose flour
  • 2 1/2 cups granulated sugar
  • 3/4 cup Dutch-process cocoa powder*
  • 2 teaspoons baking soda
  • 1 teaspoon table salt
  • 1 cup canola oil
  • 1 cup sour cream
  • 1 1/2 cups water
  • 2 tablespoons distilled white vinegar
  • 1 teaspoon vanilla extract
  • 2 large eggs

Ganache

  • 4 oz semi-sweet chocolate bar, finely chopped
  • 1/2 cup heavy cream
  • 1 1/2 teaspoons corn syrup (*optional for shine and smooth texture)

Instructions

Cake

  1. Preheat oven to 350°F. Spray a 10-inch bundt pan generously with Baker’s Joy, making sure to coat all the curves and ridges. (If not using spray, butter the pan well and dust with cocoa powder.)
  2. In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt, then whisk to combine.
  3. Add the oil and sour cream and whisk again until the mixture is smooth.
  4. Slowly pour in the water while whisking to prevent lumps and mix until fully incorporated.
  5. Stir in the vinegar and vanilla.
  6. Add the eggs and whisk until the batter is smooth and evenly mixed, scraping the bowl as needed.
  7. Pour the batter into the prepared pan. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Let the cake cool in the bundt pan for 10–15 minutes, then invert onto a wire rack and cool completely.

Make the Ganache:
Heat cream in a small saucepan until it begins to simmer (do not boil). Pour over chocolate and corn syrup if using. Let stand 2–3 minutes, then gently stir until smooth. Let cool 10 minutes before using.

Finish the Cake:
Place the cooled cake on a cake stand. Pour ganache over the top, letting it naturally drip down the sides.After pouring, let the ganache set at room temperature. If you prefer a firmer texture, refrigerate the cake for 20–30 minutes to help it set.

Notes

  • *Cocoa: For the best flavor, use Dutch-process cocoa.  Hershey’s Special Dark or Ghirardelli Dutch process both work well.
  • Ganache: For a blend of milk and semi-sweet chocolate, use 3 oz milk chocolate + 3 oz semi-sweet chocolate. Milk chocolate is softer, so this ratio helps the ganache set with the right texture.
  • Pan options: No bundt pan? Bake in a 9×13 pan: Bake 35–40 minutes or Two 8-inch round pans: Bake 30–35 minutes.

Substitutions & Variations 

  • Pan Options: No bundt pan? Bake in a 9×13 pan (35–40 minutes) or two 8-inch round pans (30–35 minutes).
  • Ganache Swaps: You can use chocolate chips for the ganache — just be sure the cream is very hot and allow a few extra minutes for the chips to melt before stirring. A powdered sugar glaze or a simple dusting of powdered sugar also works if you prefer something lighter.
  • Oil Options: Canola or vegetable oil both work — use whichever you have.
  • Flavor Add-Ins: Add 1 teaspoon espresso powder to deepen the chocolate flavor. A drop of peppermint extract also creates a seasonal variation.
  • Toppings: Fresh berries, flaky sea salt, or chocolate curls make a simple, elegant finish.

Handy Hints

  • Use Dutch-process cocoa for the best flavor: it creates a deeper, smoother, richer chocolate taste. Natural cocoa will still work, but the flavor will be lighter, less dark, and slightly more acidic.
  • Room-Temp Ingredients: Room-temperature sour cream and eggs blend more smoothly and create a softer crumb.
  • Test for Doneness: Check in a few spots — bundt pans can bake unevenly depending on the design.
  • Cool Before Inverting: Let the cake rest in the pan for 10–15 minutes before turning out. Too early and it may break; too late and it may stick.
  • Ganache Fix: If the ganache is too thick, whisk in a splash of warm cream. If it’s too thin, let it sit a few minutes to thicken.
  • Better the Next Day: The flavor deepens and the texture becomes even richer after resting overnight.
