Why this recipe Matters

Brown Butter Krispies don’t last long at our house! They are one of Gordon’s favorite desserts, so if he spots that blue box of cereal in the pantry and bags of marshmallows too, it’s an immediate:

“Ohhhhhh are you making me Rice Krispie Treats?”

For whatever reason this generates an eye roll from me as I say, “ummmm….no!”

You’d think I’d just smile, and say, “I sure am, honey!”

Nah.

This classic back and forth is a fundamental part of our relationship.

I say, yes.

he says, no.

I say, no.

he says, yes.

Ying and Yang.

Of course I’m making the Rice Krispie Treats for him, but adding in all the pleasantries…

Who needs it?

This way the mystery stays alive.

No need for me to be sweet.

Besides, he’ll get all the sweetness he needs when he eats the pan of Brown Butter Krispies.

And he knows I love him.

Back to the recipe and why Gordon loves them so much. The secret is really the browned butter. Sure you can skip this step and just melt the butter, but trust me, this is a total game changer.

Brown butter adds a rich flavor and a slight caramel aroma to the the back of the box, Original Rice Krispies Treats recipe.

Reserve some marshmallows to fold in at the end for extra pull apart oooey gooey goodness.

There are a few tricks to making these Brown Butter Krispies amazing. First, do not rush the browning of the butter or the melting of the marshmallows. Next, do not mix everything together in the hot pan. Measure the cereal into a large mixing bowl and pour the hot mallow topping over it.

I lied, there’s four tricks. Don’t tell your loved one your making the treats. Discreetly set the box of cereal and marshmallows on display in the pantry. Deny that you’re making them. Then surprise them with a random batch of these delicious treats. They’ll be onto you as soon as the beautiful brown butter smells fills the house.

It’s a win-win for everyone.

Handy Hints for Brown Butter Krispies

•To easily lift Brown Butter Krispies out of a pan, line the pan with parchment paper that overhangs the sides. Fold the parchment paper over to create crisp lines on the sides, creating makeshift handles that you can use to remove the treats.

•Brown Butter Krispies can be frozen. Simply place in layers separated by wax paper in airtight container. Freeze for up to 6 weeks. Let stand at room temperature for 15 minutes before serving.

Ingredients

Scale

9 cups Rice Krispies cereal

12 tablespoons unsalted butter

1/2 teaspoon kosher salt

12 cups marshmallows (210 oz bags)

1 teaspoon vanilla extract

Instructions

1. Grease a 13 x 9 x 2-inch pan with butter or cooking spray and set aside.  

2. Begin by measuring rice cereal into a large bowl.

3. In large pot, melt butter over low heat for about 10 minutes, until it turns a deep golden brown color.

4. Keeping the heat set to low, add in 10 cups of the marshmallows and the kosher salt.  Stir occasionally until the marshmallows are completely melted.  Remove the pot from the heat, add in the vanilla extract and stir to combine.

5.  Pour the melted marshmallow mixture and the 2 cups additional marshmallows to the bowl of cereal and stir until well coated.

6.  Pour into prepared pan.  Using the back of the butter wrapper, wax paper or a fork that has been greased with butter, press the cereal mixture evenly into the pan. 

7. Cool for at least 30 minutes.  Cut into squares, serve & enjoy!  

Notes

•These are best served the same day, but can be stored for two days at room temperature in an airtight container.  

•For extra gooey Brown Butter Krispies, melt all 12 cups of marshmallows instead of reserving 2 cups of marshmallows to fold in.  They are delicious this way as well!
