The cheese is layered in thoughtfully. About a half cup is stirred in to bring everything together. More is added on top as it bakes for a simple, lightly melted finish.

Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breast, cut into small bite-sized pieces
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 small onion, finely diced
  • 1 cup shredded carrots
  • 2 tbsp butter
  • 1 1/4 cups jasmine rice
  • 1/2 cup orzo
  • 4 cloves garlic, minced
  • 3 1/2 cups low-sodium chicken broth
  • 1 1/2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 2 bay leaves
  • 4 cups broccoli florets, chopped small
  • 1/2 cup milk
  • 1 1/2 cups sharp cheddar cheese, divided

Instructions

  1. Preheat oven to 425°F.
  2. Heat olive oil in in a large pot or Dutch oven over medium heat. Add chicken, season with ¼ tsp kosher salt and ¼ tsp black pepper, and cook for a few minutes, stirring occasionally, until lightly cooked on both sides.
  3. Add onion and cook for 2–3 minutes until softened. Stir in shredded carrots and cook for another 1–2 minutes.
  4. Add butter, rice, and orzo. Cook over medium heat for 3–4 minutes, stirring constantly, until lightly toasted.
  5. Stir in garlic and cook for about 30 seconds, just until fragrant.
  6. Pour in chicken broth. Stir in Italian seasoning, ½ tsp kosher salt, and bay leaves. Add the broccoli and stir everything together, then bring to a simmer.
  7. Once simmering, cover, reduce heat to low, and cook for 20 minutes, until the rice is tender and most of the liquid is absorbed.
  8. Remove lid and discard bay leaves. Add milk and ½ cup cheese, gently stirring until combined.
  9. Transfer the mixture to a 9×13-inch baking dish and spread evenly, or bake directly in the pot if it’s ovenproof.
  10. Sprinkle remaining 1 cup cheese over the top.
  11. Bake for 15–20 minutes, until the cheese is melted and the casserole is set.
  12. Let rest for a few minutes, then spoon into individual bowls, topping with a little extra grated cheddar and a sprinkle of salt and pepper. Serve with tortilla chips.

Substitutions & Variations 

  • Chicken → Rotisserie Chicken: Use shredded rotisserie chicken (about 2 cups, from 2 breasts) and stir it in with the milk and cheese instead of cooking raw chicken. This makes the recipe even faster.
  • Carrots → chopped carrots: If you don’t have shredded carrots, finely dice whole carrots instead and cook them until just tender.
  • Cheddar → Monterey Jack or blend: Swap part of the cheddar for Monterey Jack for a milder flavor and smoother melt.
  • Jasmine rice → basmati rice or long grain white: Jasmine rice gives this dish its light, soft texture, but basmati rice or long grain white can be used if needed. Avoid short grain or brown rice, which will change the texture and cook time.

  • Use a Large Pot or Dutch Oven: The rice expands as it cooks, so make sure your pot is large and deep enough to hold everything comfortably without crowding.
  • Cut Broccoli Small: Smaller florets cook more evenly with the rice and make the final dish easier to scoop and serve.
  • Don’t Skip the Rest Time: Letting the bake sit for 5–10 minutes before serving helps everything set and gives you that light, scoopable texture.
  • Taste Before Baking: Once the rice is cooked, give it a quick taste and adjust salt if needed before transferring and baking.

Make-Ahead Tips

  • Make Ahead: Prepare the recipe through the stovetop step (after the rice is cooked and everything is mixed together). Transfer to your baking dish, cover, and refrigerate up to 1 day.
  • Before Baking: Let the dish sit at room temperature for 20–30 minutes, then top with cheese and bake as directed. You may need to add a few extra minutes to the bake time.
