Baked Sweet Potatoes with Harvest Honey Butter

Ingredients

Baked Sweet Potatoes

•4 sweet potatoes

•1-2 cups water

Harvest Honey Butter

•1/2 cup unsalted butter, softened

•2 tablespoons powdered sugar

•1 tablespoon honey

•1/4 teaspoon cinnamon

•1/4 teaspoon ground nutmeg

•1/4 teaspoon table salt

•1/4 teaspoon pure vanilla extract

Instructions

Baked Sweet Potatoes

  1. Preheat the oven to 400°. Wash the sweet potatoes thoroughly. Using a sharp knife, cut a 2 inch slit into the top center of each potato.
  2. Place the potatoes in a baking dish, pour in enough water to cover up the bottom sides of the potatoes with 1/4 to 1/2 inch of water.
  3. Cover the dish tightly with foil and bake for 50-60 minutes, until the potatoes are tender.  

Harvest Honey Butter

  1. To the bowl of a stand mixer or using a hand mixer, add butter. Using the beater blade, mix on low to break up the butter for about one minute. Scrape down the butter on the sides of the bowl, add the remaining ingredients and mix on medium-high speed for about three minutes, until the butter is light and fluffy.
  2. Transfer the whipped butter to a small bowl or ramekin.
  3. Once the potatoes are baked, remove from the oven and allow them to cool for at least five minutes.  Serve with a dollop of Harvest Honey Butter. Enjoy!
