Why This Recipe Matters
This Jalapeño Tomatillo Ranch is a creamy, flavor-packed sauce inspired by Cafe Rio’s Creamy Tomatillo Dressing—and it’s the easiest way to elevate tacos, bowls, and salads.
Two of my brothers live out West, so we’ve visited one of their favorite spots—Cafe Rio, a popular Mexican restaurant. Everyone orders something different, but what really makes most of their menu items shine is their Creamy Tomatillo Dressing.
After one trip, I came home determined to recreate it. I found several copycat versions that used ranch seasoning packets, but I prefer building flavor with simple, fresh ingredients instead.
This version does exactly that. It’s smooth, vibrant, and packed with fresh cilantro, lime, and just enough jalapeño to give it a little kick. It’s the kind of sauce you’ll want to drizzle over everything.
And by everything…I mean everything.

Prepare Your Taste Buds
When I say this dressing is simple, I mean it.
Start with mayonnaise and sour cream, then add garlic and onion powder, jalapeño, and a diced tomatillo. Blend until smooth, then finish with fresh cilantro and a squeeze of lime for a creamy, vibrant, and seriously delicious dressing.
Trust me—it’s hard not to drizzle this over everything. Tacos, taco salads, rice bowls… it works on just about anything. I like to make a batch and plan a couple of meals around it for the week—usually tacos one night and a southwest chicken salad or bowl the next.
It’s one of those recipes that always gets a reaction at the table…
Mom, this dressing is amazing.
Sara, this is really good—I need to stop eating. I’ve had way too much…
Even if you’ve never been to Cafe Rio—or don’t have one nearby—this is still a recipe worth making. Definitely give it a try and I have a feeling it will become a regular in your rotation.

Handy Hints
- Prep the tomatillo: Remove the papery husk, then rinse under water to remove the slightly sticky coating before using.
- Control the heat: For a mild, family-friendly version, remove the seeds and ribs from the jalapeño. If you prefer more heat, leave some or all of the seeds in to give the dressing a little extra kick.
- Adjust the consistency: If the dressing is too thick, add a small splash of extra lime juice to loosen it to your desired consistency.
- Let it chill: This dressing thickens as it sits and the flavors develop. I highly recommend making it ahead of time or letting it chill for at least an hour before serving.
